OUR STORY
On December 18th, 2022, ADESSO Vineria-Bistrot became a reality.
Located at Via dell’Orso 71, just steps away from Piazza Navona and in the heart of the Eternal City, ADESSO is our second venue after CiPASSO Bistrot (https://www.cipassoitalia.it/).
Back in 2018, right in what is now ADESSO’s current location, we opened CiPASSO Vineria-Bistrot with one clear goal: to create an emotional experience for every guest.
THE NAME
Our friends, loyal customers, and suppliers would often ask us: “So, what will you do now? Will you reopen the vineria-bistrot on Via dell’Orso or not?”
That’s when we decided to play with the word itself - Adesso - a word we all use daily to refer to the most vibrant kind of present.
In life, nothing should ever be postponed, because the right moment is ADESSO!

Our mission is to celebrate and promote the food and wine culture of the Bel Paese, offering dishes, charcuterie boards, and specialties to be enjoyed in a charming location in the heart of the Capital.We enhance the quality of our raw ingredients by creating plates that pair perfectly with our carefully curated wine selection.

VINERIA-BISTROT BECAUSE
Our place is small and intimate, with high tables and super comfortable stools designed by Sestini&Co (https://www.sestiniecorti.it/), Tuscan artisans for generations, ensuring you spend your evening in total comfort and relaxation.
The design is curated by the same architect behind CiPASSO, Francesco Zarbano: minimal style, warm atmosphere, lots of thoughtful details, visible wine bottles—and guaranteed relaxation.
VALUES AND PRINCIPLES
Our experience with CiPASSO taught us that a perfect menu is not made only of excellent dishes and fine wines, but also of elements that go beyond the kitchen: high quality, respect for raw materials, ethics, professionalism, and friendliness are the cornerstones of our working and human philosophy.
Solid principles, constant and continuous respect toward our guests and colleagues, and above all, a great desire to grow and amaze - with simplicity.
ADESSO CiPASSO!
Our two locations, just a 2-minute walk from each other, share the same values, ethics, quality, and atmosphere—but offer different culinary experiences.
At CiPASSO, you can enjoy the creations of Chef Adriano De Angelis, who enhances the flavors of the sea, land, and truffle with his appetizers, first and second courses. It’s the perfect place to savor the rich yet delicate tastes of traditional Roman and regional dishes, with a contemporary twist.
At ADESSO, Chef Davide Fiorini serves boards, crostini, and various specialties—from “Burrata a Roma” to “Lasagna of the Day,” from “Beef Tartare” to “Roasted Octopus.”
Every guest is special to us, and we put all our passion into making them feel at home and giving them the best night of their life.
